Ingredients:
- 1 cup broccoli
- 1 cup carrots
- 1 red pepper
- 1 cup vegetable broth
- 1 medium avocado in half
- 1 tbsp jalapeno pepper
- 1 tbsp green onion
- ½ tsp garlic powder
- 2 tbsp cilantro, chopped (1 tbsp for garnish)
- Salt and pepper to taste
Directions:
Boil vegetables in chicken broth until tender. Let cool. Cut vegetables into small pieces. Add jalapeno, green onions, cilantro, salt, pepper, and garlic powder. Mix well. Fill the avocado with the vegetable mixture. Finally, garnish with cilantro.
