Ingredients
- 2 cups salad greens
- 6oz of pork tenderloin
- ½ cucumber diced
- ½ cup sweet corn
- 1 cup cooked quinoa
- ½ cup cherry tomatoes
- ½ Haas avocado sliced
- 2 tbsp red onions
- 2 tbsp cilantro chopped
- 2 tbsp BBQ sauce
- 2 tbsp avocado mayonnaise
- Salt and pepper
Directions
Cook pork tenderloin in olive oil, salt, and pepper. Cook quinoa as directed in the package. Layer bowl with salad greens, quinoa, all veggies, and pork. Toss all ingredients together. Mix BBQ sauce with mayonnaise and pour over salad. Garnish with cilantro and enjoy!
