Ingredients
- 3 cups fresh arugula or baby spinach
- 1 sliced fresh peach
- 1/2 cup slivered almonds or pine nuts
- 2 tbsp crumbled feta cheese
- 2 green onions, chopped
For the vinaigrette:
- 1/3 cup olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 2 teaspoons lemon juice
- 1-1/2 teaspoons balsamic vinegar
- 1 tbsp peach preserve
- Salt and pepper to taste
Directions
In a salad bowl, combine the first 5 ingredients. In a small bowl, whisk the vinaigrette ingredients. Drizzle over salad and toss to coat. Refreshing and delicious!
