Scrambled Eggs, Ham, and Avocado Toast

Tostada con revoltillo, jamón y aguacate

Ingredients

  • 2 eggs
  • 1 slice multigrain whole toast
  • 1 slice avocado
  • 1 teaspoon chopped cilantro
  • 2 oz thin ham chopped
  • Sprinkle of paprika
  • Salt and pepper to taste

Directions:

Heat the oil spray in a medium pan over medium heat. Whisk eggs well. Once the pan is hot, pour the egg into the pan. Once the eggs begin to set, stir with a spatula to scramble. Add the chopped ham and mix. Add avocado slices. Sprinkle with paprika, salt, pepper, and cilantro. Serve with whole-grain toast.
