Ingredients:
- 2 eggs
- 1 slice multigrain whole toast
- 1 slice avocado
- 1 teaspoon chopped cilantro
- 2 oz thin ham chopped
- Sprinkle of paprika
- Salt and pepper to taste
Directions:
Heat the oil spray in a medium pan over medium heat. Whisk eggs well. Once the pan is hot, pour the egg into the pan. Once the eggs begin to set, stir with a spatula to scramble. Add the chopped ham and mix. Add avocado slices. Sprinkle with paprika, salt, pepper, and cilantro. Serve with whole-grain toast.
