Salmon Veggie Skewers

Brochetas de salmón y verduras

Ingredients: 

  • 8 oz of salmon thick cut into cubes  
  • 1 small yellow zucchini  
  • 1 small green zucchini  
  • 8 cherry tomatoes  
  • 8 mushrooms  
  • 1 small red onion  
  • Handful of fresh spinach  
  • 3 bamboo skewers  
  • 2 tbsp olive oil  
  • 2 garlic cloves 
  • 1 twig of thyme  
  • ¼ tsp turmeric  
  • Salt and pepper  

Directions: 

In a medium skillet, sauté garlic, onions, thyme, zucchini, tomatoes, and mushrooms. Add turmeric, salt, and pepper. Add salmon last and cook until desired warmth.  

Layer 3 leaves of spinach each time, then yellow zucchini, tomato, green zucchini, mushroom, red onion, and salmon. Repeat and fill out two more skewers. It’s colorful and delicious!
