Tarragon Chicken salad

Ensalada de pollo al estragón

Ingredients:

  • 8 oz cooked chicken breast
  • ¼ cup avocado mayonnaise
  • 1 tsp Dijon mustard
  • ¼ cup celery minced
  • 1 tablespoon dried cranberries
  • 2 tbsp red onion chopped
  • 2 leeks sliced
  • 1 tbsp chopped tarragon
  • 2 tbsp cilantro chopped
  • ¼ cup walnuts
  • 6 leaves butter lettuce
  • Preparation:
  • Combine all chicken salad ingredients. When ready to eat, add chicken salad on top on butter lettuce.
  • Serve with 1 cup baby carrots.
