Ingredients:
- 8 oz cooked chicken breast
- ¼ cup avocado mayonnaise
- 1 tsp Dijon mustard
- ¼ cup celery minced
- 1 tablespoon dried cranberries
- 2 tbsp red onion chopped
- 2 leeks sliced
- 1 tbsp chopped tarragon
- 2 tbsp cilantro chopped
- ¼ cup walnuts
- 6 leaves butter lettuce
- Preparation:
- Combine all chicken salad ingredients. When ready to eat, add chicken salad on top on butter lettuce.
- Serve with 1 cup baby carrots.
