Ingredients:
- 1 cup mixed greens (spinach, lettuce, arugula, kale, or your choice)
- 1/2 cup cherry tomatoes
Cilantro dressing
Ingredients:
- ½ cup Greek yogurt
- 1 bunch of cilantro
- 2 tablespoons fresh lemon juice
- 1/3 cup olive oil
- 1 tablespoon of honey
- 1 tablespoon pear vinegar
- 1 teaspoon chopped chives
- 1 teaspoon minced garlic
- Salt and pepper to taste
Directions:
For the dressing, mix all ingredients in a blender until creamy. Serve 4 tablespoons of this mixture over the green salad and tomatoes. Store the rest in the fridge. Mix well and enjoy.
