Green Salad with Creamy Cilantro Dressing

Ensalada verde-roja

Ingredients:

  • 1 cup mixed greens (spinach, lettuce, arugula, kale, or your choice)
  • 1/2 cup cherry tomatoes

Cilantro dressing

Ingredients:

  • ½ cup Greek yogurt
  • 1 bunch of cilantro
  • 2 tablespoons fresh lemon juice
  • 1/3 cup olive oil
  • 1 tablespoon of honey
  • 1 tablespoon pear vinegar
  • 1 teaspoon chopped chives
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Directions:

For the dressing, mix all ingredients in a blender until creamy. Serve 4 tablespoons of this mixture over the green salad and tomatoes. Store the rest in the fridge. Mix well and enjoy.
