COLORFUL CHICKEN SALAD Ingredients: 6 ounces chicken breast, cut into strips 1 tablespoon olive oil 1 teaspoon lemon juice 1 teaspoon Dijon mustard 1 cup chopped romaine lettuce ½ cup sliced carrots ½ chopped cucumber ½ chopped red onion ½ teaspoon cilantro Directions: Sauté the chicken strips in a skillet over medium heat for 5 minutes, until cooked and browned.
