Ensalada de coliflor, espinacas y garbanzos


  • 1 head cauliflower cut into florets
  • 1 cup spinach chopped
  • 1 cup garbanzo beans drained and rinsed
  • ½ cup cranberries dried
  • ½ cup red onion
  • 1 tablespoon flax seeds
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Place cauliflower in a food processor. Process cauliflower until is broken down into rice sized. In a bowl add cauliflower, spinach, garbanzo, red onions, cranberries. Toss with balsamic vinegar, olive oil salt and pepper.
