CHICKPEA VEGGIE SALAD

Ensalada de garbanzos y vegetales

Ingredients:

  • 2 cups spinach
  • 1 cup cucumber, chopped
  • ½ cup red onion, diced
  • ½ cup tomato, chopped
  • 1 cup chickpeas, drained and rinse
  • ½ cup black olives
  • 1 tablespoon parsley, chopped

For the dressing:

  • 2 tablespoons hummus
  • 2 tablespoons balsamic vinegar

Directions:

Mix all the veggies together with the hummus and balsamic vinegar dressing to quickly enjoy a healthy lunch!
