Ingredients
- 6 oz lean pork tenderloin sliced
- 1 cup Bok choy
- 1 cup quinoa
- 2 tbsp olive oil
- 5 tbsp liquid aminos
- 1 tbsp rice vinegar
- 1 tbsp green onions
- 1 tsp red pepper flakes
- 3 mandarin wedges
- Salt and pepper
Directions
Cook quinoa according to package directions. In a small bowl, stir liquid aminos, vinegar, and red pepper flakes until blended. Heat oil in a large nonstick skillet over medium-high heat. Add pork and stir fry for 5 minutes or until fully cooked. Add Bok choy, mandarin wedges, and amino mixture and cook for 3 minutes. Serve quinoa in a bowl and add pork mixture and green onions.
