CHEESY CHICKEN STUFFED AVOCADO

Aguacate relleno de pollo y mozzarella

Ingredients:

  • ½ cup chicken breast, cooked and shredded
  • 1 cup cherry tomatoes
  • 1 ounce of small mozzarella cheese balls
  • 1 tablespoon pesto
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon chopped cilantro
  • ½ avocado
  • 1 tablespoon freshly chopped basil
  • 1 tablespoon balsamic glaze
  • Salt and pepper

Directions:

Combine the tomatoes, chicken, mozzarella, pesto, cilantro, garlic, olive oil, and salt and pepper together in a bowl. Mix well and combine thoroughly. Fill the avocado with this mixture and drizzle on some balsamic glaze. Sprinkle with basil for a delicious and nutritious lunch!
