Ingredients:
- 1 chicken filet diced into cubes or 6 large shrimp
- 1 cup of whole wheat pasta (spinach, quinoa or vegetable)
- 15 basil leaves
- 2 tablespoons of pine nuts
- 3 garlic cloves
- 3 teaspoons of extra virgin olive oil
- salt and pepper to taste
Preparation:
Cook the pasta following the package instructions. Drain when ready and return it to the pot.For the pesto sauce, put the basil leaves, garlic cloves, olive oil, and salt and pepper in a blender or a food processor and pulse until mixed.
Add the sauce to the hot pasta and let sit for a few minutes.
For the meat, grease a pan with olive oil and place the cubed chicken or shrimp. Turn up the heat to medium and cook until done (5-10 minutes), stirring often.
Place the pasta on a plate or in a bowl and serve the chicken or shrimp on top of it, with sprinkled pine nuts. You will love it!
