Ingredients
- 1 cup cooked cauliflower rice
- 2 tablespoons chopped red pepper
- 1/2 stalk of green onion, sliced
- 1/3 cup shredded purple cabbage
- 1 large egg
- 1 tablespoon Aminos or low sodium soy sauce
- 1/2 teaspoon sesame oil
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions
Place the cauliflower rice into a pan with olive oil on medium heat. Lay the red pepper, green onion, and cabbage on top. Beat an egg and mix in the soy sauce or Amino, sesame oil, and onion powder. Pour the egg mixture into the pan with the cauliflower rice and stir with the vegetables.
