Tequila Lime Steak Zoodles

  • 2 tablespoons olive oil, divided
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 1/4 cup tequila
  • 1 teaspoon grated lime zest
  • 1 tablespoon lime juice
  • 6 oz steak (grilled)
  • 1 medium zucchini, spiralized (about 3 cups)
  • Salt and pepper to taste
  • 1/4 cup minced fresh cilantro 


In a large skillet, heat one tablespoon of olive oil over medium heat. Add shallot and garlic and cook for 1-2 minutes. Remove from heat. Stir in tequila, lime zest, and lime juice. Cook over medium heat until liquid is almost evaporated, 2-3 minutes. Add remaining olive oil and stir in steak and zucchini. Sprinkle with salt and pepper. Cook and stir until the desired temperature of steak and zucchini is crisp-tender, 4-5 minutes. Sprinkle with cilantro and additional lime zest. Enjoy!
