Ingredients:
- 1 6-ounce chicken breast, sliced
- 1 medium green zucchini or zucchini
- 1 yellow zucchini or zucchini, medium
- ½ cup cherry tomatoes
- ½ cup artichoke hearts, diced
- ½ cup pitted black olives
- 1 tablespoon feta cheese
- 1 tablespoon raisins
- 1 teaspoon olive oil
- Salt and pepper
Preparation:
Season the chicken with salt, pepper, garlic and cook. Cut the zucchini like noodles. Bring 4 cups of water to a boil in a medium pot. Once it boils, add the zucchini noodles and cook for about 3 minutes. Drain them before placing them in a bowl. Add the tomatoes, artichokes, black olives, feta cheese, raisins, olive oil, salt and pepper. Mix well and enjoy!
