Veggie Scramble

Revoltillo de verduras

Ingredients:

  • ½ cup egg whites
  • ½ cup mushrooms, sliced
  • 1 tablespoon fresh red bell pepper, diced
  • 1 tablespoon chives, chopped
  • 1 tablespoon cilantro or parsley, chopped or dry
  • 1 ¼ ounce low-fat Swiss cheese
  • Salt and pepper to taste

Directions:

Heat a frying pan over medium heat and add all the ingredients except the egg whites. Cook until soft. Add the beaten eggs, stirring well to combine. Turn off the heat when cooked, sprinkling cheese on top to melt. There you have it, a tasty and healthy breakfast!
