Sun Kissed Grilled Shrimp

  • 8 medium shrimp
  • 2 tbsp olive oil
  • 1 tablespoon lemon juice
  • ½ tsp chili powder
  • ½ tsp ground ginger
  • Salt and pepper to taste
  • Cilantro chopped
  • 8 bamboo sticks
  • 1 cup of cooked quinoa or brown rice


Combine the olive oil, lemon juice, chili powder, ginger, salt, and pepper in a small bowl. Thread each shrimp onto the bamboo skewers. Grill shrimp, covered, over medium heat for 3-5 minutes on each side or until shrimp turns pink, basting occasionally with olive oil mixture. Remove from grill, and sprinkle with cilantro. Serve with quinoa or brown rice. Enjoy!
