Sweet Stuffed Peppers

Pimientos dulces rellenos


  • 6 oz lean ground beef
  • 1 yellow or red pepper cut in halves
  • 2 tbsp olive oil
  • 1 garlic clove minced
  • 2 tbsp red onions chopped
  • ½ cup cooked quinoa
  • 1 carrot shredded
  • Salt and pepper to taste


Cook ground meat with olive oil, garlic, red onions, and carrots. Cook quinoa as directed by package, using chicken broth instead of water for more flavor. Mix all ingredients and set aside.

Preheat the oven to 400 F. Place bell pepper halves and bake for 3 to 5 minutes. Pour mixture into peppers. Bake for 30 to 35 minutes. Enjoy!
