Ingredients
- 2 eggs
- 4 oz lean ham, cut into small cubes (can substitute for chicken breast in cubes)
- 1 cup spinach
- 1 cup coconut flour
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1 tbsp green onion, chopped
- 1 cup milk coconut
- 1/3 cup ricotta cheese or cottage cheese
- 1 tsp fresh thyme
- 1 tsp nutmeg
Directions
Preheat the oven to 350 F. In a large skillet over medium heat, add olive oil, ham or chicken, spinach, green onions, and garlic. Cook and stir for 5 minutes. Combine milk, ricotta or cottage cheese, and nutmeg in a medium bowl. Gradually whisk in coconut flour. Then, add the eggs beaten and thyme. Pour over spinach and ham or chicken. Transfer the mix to the baking dish. Bake for 20 minutes.
