White Bean Chilly with Chicken and Greens

Chile de frijoles blancos con pollo y verduras


  • 4-6 oz shredded cooked chicken
  • 1 can white beans
  • 1 cup shredded kale or collard greens
  • 2 tbsp olive oil
  • 2 tbsp red onions chopped
  • 2 leeks sliced
  • 2 cloves garlic minced
  • ½ tsp jalapeño minced
  • 2 tbsp cilantro or parsley


In a medium pot, add olive oil, red onions, garlic, jalapeño, and kale or collard greens. Sauté until wilted and flavors have all mixed in. Add white beans and shredded chicken, stirring it until warm. Garnish with cilantro or parsley and devour!
