Ingredients:
- 1 cup radish sliced
- 1 cup apple chopped
- 1 teaspoon olive oil
- 1 tablespoon cilantro
- 8 ounces shrimp
- 2 tablespoons feta cheese crumbled
- 6 cups romaine lettuce chopped
Dressing:
- 2 tablespoons lime juiced
- 1 tablespoons olive oil
- 2 dashes mustard
- Salt and pepper to taste
Directions:
Season shrimp with salt and pepper. Preheat oil in skillet over medium high heat. Add the shrimp to the pan and cook for 2-3 minutes on each side, until the shrimp is pink and cooked through. Set aside and let cool. Slice radishes and apples. Chop lettuce. Mix lettuce, radishes, apples add shrimp. Whisk dressing ingredients together. Sprinkle feta cheese and cilantro.
