Arab-Andean style chicken stew

Guisado de pollo estilo árabe-andino


  • 6 ounces chicken cut into strips 
  • 2 tablespoons olive oil 
  • 1 cup frozen mixed vegetables 
  • 2 tablespoons of raisins 
  • 2 tablespoons pistachios without salt crushed 
  • 2 leeks cut into slices 
  • ½ small red onion chopped 
  • 2 cloves of garlic, minced 
  • 1 cup of quinorto 
  • 1 packet of chicken or vegetable broth 



In a medium skillet over low heat, add the olive oil, garlic, raisins, onion, leeks, and vegetables and sauté. Add the chicken strips and cook everything very well. Separately, cook the quinoa as directed on the package, replacing the water with broth to give it more flavor. Serve the chicken strips over the quinoa and decorate with pistachios. To enjoy!
