Ceviche Tostada
Ingredients:
- 1 lb white fish, shrimp, or mixed frozen seafood
- 1 cup freshly squeezed lime juice
- ½ cup red onion, diced
- 1 cup spinach, chopped
- ½ cup mango or pineapple, diced (could be frozen)
- 1 cup cucumber, diced
- 1 small jalapeño, finely chopped
- ½ cup cilantro, chopped (set aside a few leaves for garnish)
- Corn tortilla or lettuce leaf (could use both)
- Salt and pepper to taste
Preparation:
