Ceviche Tostada

Ingredients:

  • 1 lb white fish, shrimp, or mixed frozen seafood
  • 1 cup freshly squeezed lime juice
  • ½ cup red onion, diced
  • 1 cup spinach, chopped
  • ½ cup mango or pineapple, diced (could be frozen)
  • 1 cup cucumber, diced
  • 1 small jalapeño, finely chopped
  • ½ cup cilantro, chopped (set aside a few leaves for garnish)
  • Corn tortilla or lettuce leaf (could use both)
  • Salt and pepper to taste

Preparation: 

Marinate the seafood or fish in lime juice for 20-30 minutes in the refrigerator. Once the fish has changed color, add all the other ingredients and mix gently. Serve on a corn tortilla, lettuce leaf, or a combination of both. Garnish with cilantro. Enjoy!
