Ingredients:
- 1 ½ cup grated cauliflower
- 1 egg
- 1 ½ cup freshly shredded mozzarella cheese (½ cup for stuffing)
- 1 tsp chia seeds
- Salt and pepper to taste
- Chopped cilantro
Directions
Preheat the oven to 425 degrees. In a blender or food processor, blend cauliflower, egg, cheese, salt, and pepper. Add chia seeds. Shape into round disks 4-5” until the blend is used up. Bake 10 minutes until golden edges. Stuff with mozzarella cheese while arepas are still warm. Sprinkle chopped cilantro.
