Ingredients
- 6 oz salmon cooked, pulled apart
- ½ cup tomato, chopped
- 2 tbsp avocado mayonnaise
- 1 medium Haas avocado, cut in halves
- 2 tbsp red onions
- 1 tsp dill minced
- 2 tbsp white raisins
- 2 tbsp sliced almonds
- 6 cherry tomatoes, cut in half
- Salt & pepper to taste
- 6 cilantro leaves for garnish
- 1 tbsp olive oil
- 1 cup fresh salad greens
Directions
Cook salmon and let cool to room temperature, pull apart. In a bowl, mix the shredded salmon, tomato, onion, dill, raisins, almonds, mayonnaise, salt, and pepper. Stuff both avocado halves with the mixture. Garnish with cilantro and serve on a bed of fresh garden greens mixed with olive oil, salt, and pepper.
