Salmon Stuffed Avocado Salad

Aguacate relleno de salmón


  • 6 oz salmon cooked, pulled apart
  • ½ cup tomato, chopped
  • 2 tbsp avocado mayonnaise
  • 1 medium Haas avocado, cut in halves
  • 2 tbsp red onions
  • 1 tsp dill minced
  • 2 tbsp white raisins
  • 2 tbsp sliced almonds
  • 6 cherry tomatoes, cut in half
  • Salt & pepper to taste
  • 6 cilantro leaves for garnish
  • 1 tbsp olive oil
  • 1 cup fresh salad greens



Cook salmon and let cool to room temperature, pull apart. In a bowl, mix the shredded salmon, tomato, onion, dill, raisins, almonds, mayonnaise, salt, and pepper. Stuff both avocado halves with the mixture. Garnish with cilantro and serve on a bed of fresh garden greens mixed with olive oil, salt, and pepper.
