Cauliflower Fried Rice with Grilled Chicken

  • 6 oz chicken grilled on BBQ, chopped in small cubes
  • 1 cup cauliflower rice
  • 1 egg beaten
  • 1 cup green beans chopped
  • 1 cup carrots diced
  • 1 scallion green chopped
  • ½ cup green bell pepper
  • 1 teaspoon ginger
  • 1 teaspoon garlic
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce


Heat oil in a large nonstick pan over medium heat. Add the eggs and a pinch of salt and cook over medium until scrambled. Set the eggs aside, then sauté the scallions, ginger, and garlic in oil until softened. Add the cauliflower rice, soy sauce, green pepper, and salt. Cook, stirring often for about 2 minutes. Add the green beans and carrots and continue cooking until the cauliflower rice and vegetables are tender. Mix the rice, eggs, cooked chicken, rice vinegar, and soy sauce.
