Ingredients
- 6 oz of chicken cut into cubes
- ½ cup quinoa
- 1 tablespoon olive oil for dressing
- Salt & pepper to taste
- 1/2 cup sliced mushrooms
- 1 spring onion, chopped
- 1 celery stalk, thinly sliced
- 2 tablespoons slithered or sliced almonds
- 1 teaspoon sesame oil
- 1 small garlic clove, crushed (optional)
- One handful almonds
- Green salad (your choice)
- Low-fat salad dressing
Directions
In a small saucepan, cook quinoa as directed by the package. Remove from heat and set aside to cool. Add 1 tablespoon olive oil to a medium pan. Season chicken cubes with salt and pepper and stir fry for 2-3 minutes on each side. Set aside to cool. Cook mushrooms, onions, celery, and almonds with the chicken, and add sesame oil, miso, and garlic. Lastly, add the dressing and salad greens you like. Enjoy!
