Broccoli and Cauliflower with Fried Capers

  • 6 oz chicken breast
  • 2 cloves minced garlic
  • 1 head broccoli
  • 1/2 small head cauliflower
  • 2 tablespoons olive oil
  • 2 tablespoons baby capers, drained
  • 2 tablespoons natural sliced almonds
  • 1 lemon
  • 1 cup greens (your choice)



Cook chicken breast in 1 tablespoon of olive oil with garlic, salt, and pepper. Preheat the oven to 360°F. Cut the broccoli and cauliflower from top to base into 1" thick slices, keeping the pieces intact. Lay pieces on prepared oven-safe trays. Sprinkle with olive oil. Season with salt and pepper. Bake for 20 minutes, or until golden and tender. In a small non-stick frying pan, heat olive oil over medium heat. Add capers, almonds, and garlic. Cook until lightly golden and capers are crispy. Grate over the lemon zest. Squeeze lemon juice. Serve broccoli and cauliflower pieces. Add the caper mixture on top of your choice of veggies and chicken. Bon appetite\
