Chicken and Tomato Fettuccine

  • 5oz tomatoes, quartered or cherry tomatoes, halved
  • 1 garlic clove, thinly sliced
  • 1 tablespoon olive oil
  • 3.5oz whole-grain or veggie fettucini
  • ½ cup baby spinach
  • ½ cup shredded cooked chicken
  • ¼ cup shredded fresh basil



Preheat the oven to 360°F. Place tomatoes and garlic on a baking tray and spray with oil. Roast for 15 minutes, or until tomatoes collapse. Meanwhile, cook pasta following package directions, until just tender. Drain and return to pan. Add garlic, tomatoes (with all juices), spinach, chicken, and basil. Toss to combine. Serve topped with parmesan cheese.
