Seasoned Lentils and Brown Rice

  • 1 cup lentils
  • 1 tbsp olive oil
  • ½ small red onion
  • 1 carrot chopped
  • 1 celery chopped
  • 1 garlic clove
  • Pinch of paprika
  • Pinch of oregano
  • 2 teaspoons red wine vinegar
  • 2 cups chicken broth
  • 1 sprig of parsley chopped
  • 1 cup cooked brown rice


Cook lentils as directed in the package.

In a medium saucepan, heat oil over medium. Sauté onions, carrot, celery, garlic, oregano, paprika, salt, and pepper. Add broth, bring to a boil, and add lentils until soup thickens. Garnish with chopped parsley. Serve with brown rice. Enjoy!
