Salmon Arugula & Pineapple Salad

Ensalada de rúcula con salmón y piña

Ingredients:

  • 2 tablespoons red onion finely chopped
  • 6 ounces salmon
  • 6 cherry tomatoes
  • 4 black olives pitted
  • 1 cups arugula
  • ½ cup fresh chopped pineapple
  • 2 tbsp of walnuts
  • 1 tablespoon olive oil
  • 1 teaspoon mustard

Directions

Mix red onion, cherry tomatoes, olives, arugula, pineapple, and walnuts. Combine olive oil and mustard and add to salad. Mix well. Prepare salmon in a skillet, and once ready, layer on top of the salad. Bon appetite!
