  • 6oz white fish grilled or sauteed with salt and pepper
  • 1 medium eggplant
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp chili flakes
  • Salt and pepper to taste
  • Cilantro or parsley chopped for garnish



Preheat the oven to 390°F. Cut eggplant into 1" slices, resembling a chip. Combine oil, spices, and salt in a large shallow bowl and mix well. Add eggplant slices and mix (use your hands if you like) to coat in the spice mix. Place eggplant in a baking dish. Bake for 25-30 minutes, until crisp. Serve with grilled or sautéed fish, seasoned with salt and pepper. Garnish with chopped parsley and cilantro.
