Ingredients:
- 2 eggs
- 1 cup zucchini
- ½ cup green bell pepper
- ½ cup cherry tomatoes
- 1 cup quinoa
- 1 cup vegetable or chicken broth
- 1 tbsp olive oil
- 1tsp smoked paprika
- Salt and black pepper
Directions
In a medium pan, add olive oil and fry the eggs. Sprinkle with smoked paprika. Separately, combine quinoa with vegetable broth and cook as directed in the package. Add bell pepper, zucchini, and tomato until vegetables are tender. In a bowl, add quinoa overtop with eggs and vegetables.
