Ingredients:
- 6 oz pork loin chops, cut into strips
- 1 cup broccoli, chopped
- 1 cup carrots, chopped
- 1 cup brown rice
- 2 tbsp olive oil
- 2 tbsp cashews
- 1 tbsp pineapple, chunks
- 1 tsp rice vinegar
- 1 tsp honey
- 1 garlic clove
Directions
Heat oil in a frying pan. Add garlic and ginger, along with the pork, and fry until it is cooked the whole way through. Add the vegetables, cashews, pineapple, rice vinegar, and honey. Cook brown rice as directed by the package. Serve vegetables and pork with brown rice.
