Cheesy Egg Scramble

  • 2 eggs
  • 1 green bell pepper small diced
  • 1 tablespoon olive oil
  • 1 red onion small
  • 2 tbsp leeks
  • 5 cherry tomatoes
  • ¾ cup shredded cheddar cheese
  • 1 whole multi-grain toast


Heat oil in a large skillet over medium heat. Add onion and cook until tender.

Stir in bell pepper and cherry tomatoes. Cook until tomatoes start to soften. Add eggs and seasoning. Continue stirring until the eggs are cooked. Serve with whole-grain toast.
