Herb Pork Loin with Broccoli and Quinoa

Lomo de cerdo con hierbas, brócoli y quinua


  • 6 ounces pork tenderloin
  • 2 tablespoons olive oil
  • 2 cloves of garlic minced
  • 2 tbsp leeks
  • ½ red onion
  • 1 teaspoon paprika
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • Salt and pepper to taste
  • 2 ½ tablespoon balsamic vinegar
  • 1 cup broccoli
  • 1 cup quinoa



In a bowl, combine the balsamic vinegar, thyme, rosemary, paprika, salt, and pepper. Add the mix to season the pork and let it for 10 minutes. Preheat a large pan over medium heat. Add onion, leeks, and garlic. Add the pork and cook for about 5 minutes per side until is tender. Serve with broccoli and quinoa.
