Ingredients
- 1 medium avocado
- 1 cup chicken broth
- 1 tsp lemon
- Salt and pepper to taste
- 2 tbsp plain Greek yogurt
Directions
In a medium pan over medium heat, add broth and lemon juice until boiling. In a blender, puree avocado with yogurt until smooth. Remove from heat. Stir the avocado mixture into the broth. Refrigerate until chilled and serve on a hot summer day.
