Ingredients
- 1 tablespoon olive oil
- 2 eggs, lightly beaten
- 2 tablespoons milk
- 1/2 cup broccoli, lightly steamed
- 1 tablespoon basil pesto
- 1 cup baby spinach
- ½ cup of peas
- 2 tablespoons ricotta
- 1 tablespoon finely grated zest of lemon
- ½ teaspoon of lemon juice
- Salt and pepper to taste
Directions
Add one tablespoon of olive oil to a pan over medium heat. In a small bowl, combine eggs and milk. Then, pour the mixture into the pan. Next, add broccoli, pesto, spinach, and peas on top. Place a lid over the pan and let the omelet cook for another 2 minutes. While the omelet is cooking, in a bowl, combine ricotta, lemon zest, and lemon juice. Serve omelet and garnish with lemon ricotta and seasoned with salt and pepper.
