Ingredients:
- 2 cups salad greens
- 6oz of chicken breast
- ½ cucumber diced
- ½ cup sweet corn
- 1 cup cooked quinoa
- ½ cup cherry tomatoes
- ½ Haas avocado sliced
- 2 tbsp red onions
- 2 tbsp cilantro chopped
- 2 tbsp BBQ sauce
- 2 tbsp avocado mayonnaise
- Salt and pepper
Directions:
Season chicken breast with salt and pepper and cook with olive oil. Once ready, remove from heat and cut into cubes. Add salad greens to a big bowl. Add the quinoa, all the greens, and chicken breast. Mix BBQ sauce with mayonnaise and pour over salad. Garnish with cilantro and enjoy!
