Salmon Garden Salad

Ensalada verde con salmón


  •  6 oz canned salmon in water
  • 1 cup mixed salad leafy greens
  • 1 cup or 1 medium red potato cut into cubes
  • 2 tbsp olive oil
  • 1 tbsp black olives
  • 2 tbsp red wine vinegar
  • 1 tbsp onion, chopped
  • 1 tbsp parsley, chopped
  • Salt and pepper to taste


In a large saucepan, combine water, onion, vinegar, and pepper; bring to a boil over medium-high heat. Add potato cut into thick slices or cubes. Cover and simmer gently for 10 minutes. In a medium skillet, add salmon and simmer gently for 4 minutes until fish flakes easily. Place salad greens on a plate. Add fish, potatoes, and olives on top. Drizzle with olive oil, salt, pepper, and parsley. Mix and enjoy!
