Coconut Chicken Soup

Sopa de pollo y coco


  • 6 oz chicken breast cut into cubes
  • 1 cup zucchini
  • 1 cup spinach angel hair
  • 1 tbsp olive oil
  • 2 tbsp chia seeds
  • 1 tbsp yellow onion, chopped
  • 1 tbsp green onion, chopped
  • 1 tbsp curry powder
  • 1 tbsp fresh mint
  • 1 tsp ginger, chopped
  • ¼ tsp ground cloves
  • 1 cup unsweetened coconut milk
  • 1 cup vegetable broth
  • 1 tsp coconut extract
  • Salt and pepper to taste


Bring broth to a boil in a large skillet over high heat. Add chicken, oil, onion, salt, and cloves. Return to boil and reduce heat. Cook for 30 minutes or until chicken is tender. Add green onion, curry, coconut milk, mint, ginger, rice, and zucchini. Add angel hair and boil for 2 minutes or until al dente. When served, add chia seeds, and enjoy!
