Ingredients:
- 1 whole grain high fiber English muffin sliced in half and toasted
- 2 eggs poached
- 2 slices of tomatoes
- 2 slices of red onions
- 1 cup spinach leaves (use 10 leaves to layer on English muffin and the rest for dressing)
Pesto Dressing
- Handful of fresh basil
- Handful of spinach
- 2 tbsp olive oil
- 2 tbsp pine nuts
- Salt and pepper to taste
Directions:
Blend all pesto dressing ingredients in a food processor until creamy and spread on top of English muffin. Layer with spinach, tomatoes, onions, and poached eggs. Drizzle a little more pesto dressing on top. Bon appetite!
