Nutty Herb Chicken with Zucchini and Cilantro Rice

Pollo con hierbas y nuez con calabacín y arroz con cilantro


  • 6 oz Chicken thighs
  • 1 cup zucchini
  • 1 cup brown rice
  • 3 tbsp olive oil
  • 2 tbsp sunflower seeds
  • 2 tbsp Brazilian nuts, chopped
  • 1 tbsp onion, chopped
  • 2 clove garlic
  • 1 tbsp fresh thyme
  • 1 tsp oregano
  • 1 tsp rosemary
  • 1 tbsp orange juice
  • 1 tbsp lemon juice
  • 2 tbsp cilantro chopped
  • Salt and black pepper 


Whisk all ingredients in a bowl. Pour marinade mix into a large Ziploc bag and add chicken. Marinade for a least 30 minutes. In a medium skillet add oil. Cook chicken over medium heat. Flip chicken every 5 minutes until cooked. Add zucchini. Serve chicken with vegetable and garnish with nuts and cilantro. Cook Rice as indicated in the pkg, once its cooked add chopped cilantro, mix and serve with Chicken and zucchini.
