Chicken stir fry with pineapple and cashews

Pollo salteado con piña y anacardos


  • 6 oz chicken breast
  • 1 cup broccoli
  • 1 cup carrots
  • 1 cup brown rice
  • 2 tbsp olive oil
  • 2 tbsp cashews
  • 1 tbsp pineapple, chunk
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 garlic clove
  • 1 tsp grated ginger



Cut the chicken fillets into bite-sized pieces. Heat oil in a frying pan, add garlic and ginger, along with the chicken, and fry until it is cooked the whole way through. Add the vegetables, cashews, pineapple, rice vinegar, and honey. Cook brown rice as directed by the box. Serve vegetables and chicken with brown rice. Delicious!
