Ingredients:
- 6 oz chicken breast
- ½ cup arugula
- ½ cup spinach
- ½ cup radishes
- ½ cup cucumber chopped
- 1 cup bulgur
- 3 tbsp olive oil
- ¾ cup Greek yogurt
- ½ lemon juice
- 1 tbsp red wine vinegar
- 1 garlic clove, pressed
- 1 tbsp mint, chopped
- Salt and black pepper
Directions:
Preheat the oven to 400 F. Rub the chicken with the oil, lemon juice, salt, and pepper. Place in a baking dish and bake for 20 minutes until the chicken is cooked. Cook the bulgur according to the instructions on the package. Mix the vegetables and bulgur and add vinegar. Mix the Greek yogurt with chopped fresh mint, garlic glove, salt, and black pepper. Place the chicken and vegetable salad on the plate, and top with the Greek yogurt mix. Refreshing and healthy!
