Eggs Protein Bowl

Quinua Bowl Rico en Proteína


  • 2 eggs scrambled  
  • ½ cup black beans or garbanzos  
  • 1 sweet potato baked or air fried cut into cubes   
  • 1 Hass avocado sliced   
  • 2 tbsp olive oil   
  • 2 tbsp red onion chopped   
  • 2 leeks sliced   
  • 1 cups of tri-colored quinoa   
  • ½ tsp of turmeric  
  • ¼ tsp garlic powder   
  • 2 tbsp cilantro   
  • 2 tbsp pumpkin seeds   


In a medium skillet with olive oil, sauté onions and leeks. Add beans and cooked quinoa, and mix. Sprinkle garlic powder and turmeric. Serve warm in a bowl and add cooked sweet potato and scrambled eggs. Garnish with pumpkin seed and cilantro. Enjoy!
