Ingredients:
- 2 eggs scrambled
- ½ cup black beans or garbanzos
- 1 sweet potato baked or air fried cut into cubes
- 1 Hass avocado sliced
- 2 tbsp olive oil
- 2 tbsp red onion chopped
- 2 leeks sliced
- 1 cups of tri-colored quinoa
- ½ tsp of turmeric
- ¼ tsp garlic powder
- 2 tbsp cilantro
- 2 tbsp pumpkin seeds
Directions:
In a medium skillet with olive oil, sauté onions and leeks. Add beans and cooked quinoa, and mix. Sprinkle garlic powder and turmeric. Serve warm in a bowl and add cooked sweet potato and scrambled eggs. Garnish with pumpkin seed and cilantro. Enjoy!
