Veggie Salmon or Chicken Feta Scramble

Revoltillo sabroso con salmón o pollo

Ingredients: 

  • 2 eggs 
  • 2 oz smoked salmon or shredded chicken  
  • 1 cup of fresh watercress or spinach  
  • 1 tbsp olive oil 
  • 1 garlic cube minced  
  • 2 tbsp of red onions  
  • 2 tbsp leeks slices  
  • 2 tbsp scallions  
  • 2 tbsp feta cheese  

 Directions: 

In a medium skillet, add olive oil, sauté scallions, garlic, onion, and leeks and cook for 2 minutes. Add eggs and scramble. Add fresh watercress or spinach and then the shredded chicken or smoked salmon. Lastly, top with the feta cheese. It’s delicious and nutritious!
