Ingredients:
- 2 eggs
- 2 oz smoked salmon or shredded chicken
- 1 cup of fresh watercress or spinach
- 1 tbsp olive oil
- 1 garlic cube minced
- 2 tbsp of red onions
- 2 tbsp leeks slices
- 2 tbsp scallions
- 2 tbsp feta cheese
Directions:
In a medium skillet, add olive oil, sauté scallions, garlic, onion, and leeks and cook for 2 minutes. Add eggs and scramble. Add fresh watercress or spinach and then the shredded chicken or smoked salmon. Lastly, top with the feta cheese. It’s delicious and nutritious!
