Pork Noodle Soup Bowl

  • 6 oz lean pork tenderloin
  • 1 cup Bok choy
  • 1 cup whole wheat spaghetti, cut in half
  • 2 tbsp olive oil
  • 5 tbsp liquid aminos or low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp green onions
  • 1 tsp red pepper flakes
  • 3 mandarin wedges
  • Salt and pepper to taste


Cook spaghetti according to package directions. Drain and keep warm in a large bowl. In a small bowl, stir liquid aminos or soy sauce, vinegar, and red pepper flakes. Heat oil in a large nonstick skillet over medium-high heat. Add pork and stir fry for 5 minutes. Add Bok choy, mandarin wedges, and amino mixture. Cook for 3 minutes. Add pork mixture and green onions to pasta. Mix and enjoy this delicious meal.
