Ingredients:
- 2 eggs
- 4 oz lean ham, cut into small cubes
- 1 cup mixed vegetables (frozen)
- 1 cup coconut flour
- 2 tbsp olive oil
- 1 tbsp green onion, chopped
- 1 cup coconut milk
- 1/3 cup Greek yogurt
- 1 tsp fresh thyme
- 1 tsp nutmeg
Directions:
Preheat the oven to 350 F. Add oil to a large skillet over medium heat. Add mixed vegetables, green onions, and garlic. Cook and stir for 5 minutes. In a medium bowl, combine milk, yogurt, and nutmeg and gradually whisk in flour. Whisk eggs, thyme, and flour mix. Pour over mixed vegetables. Transfer the mix to a baking dish. Bake for 20 minutes. Serve and enjoy!
